Winemaker Antonio Flores has selected wine from the best casks from four ancient Tio Pepe soleras, where conditions in particular butts have led to more growth of the flor yeast which gives fino its distinctive flavour.
Flores said: “The 2011-12 winter months were particularly benign in Jerez, the warmer conditions encouraging the flor metabolism and ensuring an extra thick protective veil on our casks of fino.
“Due to the amount of flor present in the wine and higher ambient temperatures in late April, we have advanced the saca by a week to give the wine more time to settle in deposit prior to bottling.
“We have an especially intense En Rama this year, both due to local climatic conditions and due to the special cask selection. Despite racking off the wine a couple of weeks prior to bottling, the wine may present a stronger haze than the last edition.”
The wine will be unveiled at the London wine fair at 11am on May 22, stand M50. Flores will be on hand to explain how he selected the casks.
