City's Tasting Rooms reopen with greater emphasis on wine with food

The new owners of a Vinopolis-style wine business in Dundee say they are focusing

on a wine-with-food concept to make things "bigger and better" than before.

Derek Dolan and business partner Murdie Smith reopened the Tasting Rooms in the city centre this week

- the business

had gone into receivership in June following two-and-a-half years' trading. Former owners Graeme Scott and David Walker invested

heavily in the "one-stop wine business" in December 2005, but the business failed to take off.

Although Dolan and Smith intend to keep the retail side of the business - having bought the


of some 600 bottles

from the receivers - they say their emphasis is on selling wine with food, not just as a stand-alone purchase.

Dolan said: "There was a lot of wasted space here before - it was more like a showroom - and the focus was on wine, with food on the side. Now, it's very much about wine and food.

"We've moved the wines out of the traditional shop setting and displayed them around the walls . We've rewritten the wine list, focusing on those that can be enjoyed with food, and we're doing tastings in the shop and at our new



bar. We're also offering every wine by the glass or half-bottle with meals."

He added: "The former business struggled because Dundee is a difficult place to sell wine and customers weren't prepared to buy expensive bottles when they could get three for £10

at the

supermarket. We have to offer something more."
