Whisky gets new sampling concept

A leading Edinburgh bar operator is planning to enter the off-trade by opening a venue combining a whisky shop and café bar serving bistro-style food.

Gary Still, owner of the city’s Whiski bar-restaurant, is aiming to open the Whiski Rooms in a disused bank and two adjacent retail units in the city centre.

The shop will occupy one unit and operate under the name of the Whiski Still.

Still said the focus of the new venture would be on try-before-you-buy, with extensive in-store sampling and organised tastings. The shop will also serve Scottish produce, including a range of whisky sauces used in the Whiski restaurant.

“Getting the best quality Scottish food is key to what we do,” said Still. “We believe there’s a market for a place where you can sample your chosen whisky before you buy it.

“Whisky is such a growth market and we see this as a new way of retailing it to people.”?Whiski has already begun selling online a range of whiskies available in the bar.

“We’ve been open for about four years and have become a very successful operator,” said Still.

“It seemed a logical progression to have an online whisky shop – we had a lot of demand for it from customers at the bar.

“We’re targeting the UK at the moment but later in the year we’ll be looking at offering the service internationally.”
