The St Catherine was created by mixologist Deano Moncrieffe in response to the growing popularity of this classic white Jamaican rum. The inspiration for the St Catherine comes straight from the colours of Jamaica's own landscape in St Catherine, according to Moncrieffe.
Wray & Nephew's reputation reaches staggering proportions in its native Jamaica where it accounts for 90 per cent of all rum sold on the island.
To create the St Catherine, cut 12 white grapes in half and muddle in a Boston glass with eight mint leaves. Add 2.5cl of Wray & Nephew and 2.5cl of gooseberry & mint cordial. Add crushed ice, lightly shake all ingredients and pour into rocks glass. Garnish with a sprig of mint and a grape.
